<p>Experimented in the kitchen this morning with baked eggs. Called it &#8220;Baked Eggs Lasagna&#8221; to make it sound enticing to a 6 year old. She loves lasagna and gobbled this up even though it didn&#8217;t have any pasta layers.</p>

<h2>Make Shift Recipe</h2>
<p>Layered in bakeware:</p>
<p style="padding-left: 30px;">marinara sauce to cover bottom of oven-safe dish</p>
<p style="padding-left: 30px;">chopped green and red bell peppers &amp; onion sauteed in salsa</p>
<p style="padding-left: 30px;">shredded cheese</p>
<p style="padding-left: 30px;">roasted potatoes with italian spices</p>
<p style="padding-left: 30px;">another layer of marinara</p>
<p style="padding-left: 30px;">5 eggs broken over the top</p>
<p style="padding-left: 30px;">more shredded cheese</p>
<p style="padding-left: 30px;">a little salt &amp; pepper</p>
<p>400 degrees &#8211; 15 minutes.</p>
<p><em>(Note: That was after 15 minutes at 300 degrees and the eggs weren&#8217;t cooking. I told you this was a Make Shift Recipe!)</em></p>
